Chocolate-Avocado Pops

Summer heat is back and I love it. Funny but I never cared much for frozen treats or sweet stuff. I was always a salty kinda gal, until I stopped drinking…

Then my need/want for a sugary treat was through the roof. I enjoy an ice cream treat once in a while but to have one everyday would not be great on my waist line or blood sugar level!

I found this gem and it feeds the need for that cold, rich, chocolate craving and it full of good fats!

I bet you could add in some chopped up strawberries, blueberries or blend in bananas or other fruit as well….

  • 1 cup unsweetened almond milk
  • 1/2 cup coconut milk ( I used cream the first time)
  • 1 medium avocado
  • 1/4 cup cocoa
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla

Set up your pop molds or 4-ounce paper cups, and have 8 popsicle sticks ready to go.

In a blender, combine the almond milk, coconut milk, avocado, cocoa, maple syrup and vanilla and secure the lid. Blend the mixture until smooth, then scrape down the sides and blend again making sure there are no lumps.

Measure about 1/4 cup of the mixture into each pop mold, and divide any leftovers between them. If you are using molds, insert pop sticks and freeze. If you are using paper cups, freeze the pops for about an hour before inserting the sticks; the mixture will be firm enough to hold the stick upright.

They live with the ice cubes for only a short time until they are in my belly!

To serve, run hot water over the mold and pull out the pop. Paper cups can be torn off and discarded.

Serves: 8 | Serving Size: 1 frozen pop

Oh frozen deliciousness!!
